- In a large skillet over medium heat, melt butter. Add chopped onion and sauté until translucent, about 5 minutes.
- In a large mixing bowl, combine the sautéed onion with diced apple, dried cranberries, and cooked rice. Season with thyme, salt, and pepper. Allow to cool completely.
- Preheat your oven to 375°F (190°C). Grease roasting pan with olive oil.
- Rinse and pat dry Cornish hens. Drizzle with olive oil and season with salt and pepper.
- Stuff each Cornish hen with apple-cranberry rice stuffing, pressing gently to pack it in, without overstuffing.
- Place the stuffed Cornish hens in the roasting pan, breast side up. Roast for about 1 hour or until the internal temperature reaches 165°F (75°C).
- Let the hens rest for about 10 minutes before carving and serving.
