  • 1 tablespoon Rice Wine Vinegar Apple cider vinegar can substitute
  • 1 teaspoon Fresh Ginger Grated; ginger paste can be a substitute
  • 1 can Water Chestnuts Drained and chopped
  • 2 tablespoons Green Onions Sliced
For Serving
  • 8 Butter Lettuce Consider bib or romaine lettuce
  • Kosher Salt To taste
  • Black Pepper To taste

Method
 

Step-by-Step Instructions
  1. In a large cast-iron skillet, heat 1 tablespoon of olive oil over medium-high heat until shimmering, about 1-2 minutes.
  2. Add 1 pound of ground chicken to the skillet, breaking it apart with a spatula. Cook for about 3-5 minutes, or until the chicken is browned and cooked through.
  3. Stir in 2 cloves of minced garlic and 1 diced onion into the skillet. Continue to cook for another 1-2 minutes until the onion turns translucent.
  4. Mix in 3 tablespoons of hoisin sauce, 2 tablespoons of soy sauce, 1 tablespoon of rice wine vinegar, and 1 teaspoon of freshly grated ginger. Stir for about 1 minute.
  5. Add 1 can of drained and chopped water chestnuts and 2 sliced green onions to the mixture. Cook for an additional 1-2 minutes.
  6. Season with kosher salt and black pepper to taste. Spoon the savory filling into your prepared butter lettuce leaves.
