Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Cook the jumbo shells according to package instructions until al dente, about 10 minutes. Drain and set aside.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add ground turkey, cooking until browned for 5-7 minutes. Stir in Italian seasoning and marinara sauce. Simmer for 10 minutes.
  3. In a mixing bowl, combine 1 cup of ricotta cheese, ½ cup of Parmesan cheese, 1 cup of mozzarella cheese, and 1 beaten egg. Add chopped spinach, an additional teaspoon of Italian seasoning, and red pepper flakes. Mix thoroughly.
  4. Stuff each cooked shell with approximately 1 tablespoon of the cheese mixture. Place filled shells seam-side up into a baking dish layered with turkey marinara sauce.
  5. Sprinkle additional mozzarella or Parmesan cheese on top. Cover with foil and bake for 20 minutes until cheese is bubbly and golden.
  6. Remove foil and let cool for a few minutes before serving. Garnish with fresh herbs or more cheese if desired.
