Step-by-Step Instructions
  1. Boil salted water in a large pot. Add fresh lo mein noodles and cook for 2–3 minutes until al dente. Drain and toss with vegetable oil.
  2. Combine light soy sauce, dark soy sauce (if using), oyster sauce, granulated sugar, white pepper, cornstarch, and 2 tbsp of water in a bowl. Whisk until mixed.
  3. Heat a wok over medium-high heat. Add vegetable oil, minced garlic, grated ginger, and white green onion parts. Stir-fry for 30 seconds.
  4. Add cooked lo mein noodles and pour sauce over. Toss with tongs for 2–3 minutes until heated through and sauce thickens.
  5. Remove from heat, fold in green onion tops, and serve immediately.
