Method
 

Instructions
  1. Preheat your oven to 400°F (200°C). Gather your tools: a large skillet, a meat thermometer, and a cutting board.
  2. Generously season the pork tenderloin with salt and freshly ground pepper.
  3. In your hot skillet, heat a tablespoon of olive oil over medium-high heat and sear the pork tenderloin for 2-3 minutes on each side.
  4. Remove the pork from the skillet. In the same skillet, add minced garlic and chopped shallot, sautéing for 1-2 minutes.
  5. Pour in the chicken broth and scrape up any browned bits from the skillet. Bring to a light simmer and cook for 2-3 minutes.
  6. Lower the heat and stir in the heavy cream, Dijon mustard, and fresh thyme. Cook for another 3-5 minutes until the sauce thickens.
  7. Return the seared pork tenderloin to the skillet, spoon the sauce over it, and transfer to the preheated oven for 15-20 minutes.
  8. Remove from the oven and let the pork rest for 5-10 minutes before serving.
