  • 1 tsp Smoked Paprika Or regular paprika
  • 1 cup Sweet Corn Frozen or fresh
  • 1 bunch Broccolini Or asparagus
  • 4 cups Kale De-stemmed and chopped
  • 1 medium Jalapeños With seeds removed for less heat
  • 1 medium Cucumber Chopped
  • 1 medium Avocado Diced
For the Dressing
  • 1 cup Green Goddess Dressing Creamy blend of herbs and vegan mayo

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line two baking sheets with parchment paper.
  2. Combine the cauliflower florets with olive oil, blackened seasoning, smoked paprika, and maple syrup in a large bowl. Toss until well coated and spread on one baking sheet.
  3. On the second baking sheet, add sweet corn and broccolini, drizzle with olive oil, season, and toss to coat. Spread out in a single layer.
  4. Roast both baking sheets in the preheated oven for 20-25 minutes until vegetables are tender and lightly charred.
  5. Prepare the Green Goddess Dressing according to your favorite recipe and keep it cool in the refrigerator.
  6. De-stem and chop the kale, then massage with olive oil or lemon juice for 2-3 minutes until softened. Set aside.
  7. In a large bowl, combine roasted cauliflower, corn, broccolini, kale, cucumber, jalapeños, and avocado. Gently mix.
  8. Drizzle with Green Goddess Dressing and toss gently. Serve immediately.
