Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a baking dish with non-stick spray.
  2. In a large skillet, cook the ground beef and diced onion over medium-high heat for 6-8 minutes until browned.
  3. Stir in taco seasoning and water, bring to a boil, then reduce heat and simmer. Add black beans, tomatoes, and sour cream, cooking until heated through.
  4. Layer Fritos corn chips in the bottom of the baking dish.
  5. Pour the beef and bean mixture over the Fritos layer, then sprinkle with shredded cheese.
  6. Cover with foil and bake for 15 minutes, then remove the foil and bake for 5 more minutes until cheese is melted.
  7. Let the casserole rest a few minutes, then serve with desired toppings.
