Ingredients
  

For the Chicken Marinade
  • 1 pound Chicken Thighs Juicy choice; can substitute with chicken breasts.
  • 1/2 cup Soy Sauce Use tamari for gluten-free.
  • 2 tablespoons Sesame Oil Essential for flavor.
  • 2 tablespoons Lime Juice Fresh lime preferred.
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Ground Ginger
  • 1/2 teaspoon Chili Flakes Adjust to taste.
For the Peanut Sauce
  • 1/2 cup Creamy Peanut Butter Can use almond or sunbutter.
  • 2 tablespoons Honey Use maple syrup or agave if needed.
  • 2 tablespoons Rice Vinegar White vinegar or apple cider work as substitutes.
For the Crunchy Slaw
  • 2 cups Cabbage Shredded green and red.
  • 1 cup Carrots Julienned.
  • 1 cup Bell Pepper Sliced.
  • 1/2 cup Scallions Chopped.
  • 1/2 cup Cilantro Chopped.
For the Wrap
  • 4 pieces Flour Tortillas or Flatbreads Lettuce wraps are gluten-free.
  • 1/4 cup Peanuts Optional for garnish.
  • 1/4 cup Extra Cilantro Optional for garnish.

Method
 

Instructions
  1. Marinate the chicken by whisking soy sauce, sesame oil, lime juice, garlic powder, ground ginger, and chili flakes in a bowl. Add chicken thighs and coat thoroughly, then cover and refrigerate for at least 20 minutes.
  2. Make the peanut sauce by blending peanut butter, soy sauce, honey, rice vinegar, sesame oil, and fresh garlic until smooth. Adjust consistency with warm water if needed, then set aside.
  3. Prepare the slaw by tossing cabbage, carrots, bell pepper, scallions, and cilantro in a bowl. Drizzle with lime juice, rice vinegar, sugar, and salt, mixing well. Let sit for about 10 minutes.
  4. Cook the chicken on a preheated grill pan for 5-7 minutes on each side until fully cooked. Let it rest for a few minutes before slicing.
  5. Assemble the wraps by warming tortillas, spreading peanut sauce, adding slaw and sliced chicken, drizzling with more sauce, and sprinkling with peanuts and cilantro. Roll tightly and slice in half.
