  • 1 medium Zucchini Skip peeling
  • 1 cup Cherry Tomatoes Diced
  • 2 cloves Garlic Minced
For Seasoning
  • 1 teaspoon Garlic Powder Optional
  • 1 teaspoon Italian Seasoning To taste
  • 1/2 teaspoon Chili Flakes Adjust to spice preference
  • 1 teaspoon Salt To taste
  • 1/2 teaspoon Black Pepper To taste
For Garnishing
  • 1/4 cup Parmesan Cheese Grated, optional for vegan version
  • 1/4 cup Fresh Basil Chopped

Method
 

Cooking Steps
  1. Bring a large pot of salted water to a boil and cook pasta according to package directions for 8-10 minutes, reserving ¼ cup pasta water before draining.
  2. In a skillet, heat olive oil over medium heat and sauté zucchini for 4-5 minutes until golden.
  3. Add cherry tomatoes and minced garlic to the skillet; sauté for 3-4 minutes until tomatoes soften.
  4. Add reserved pasta water, Italian seasoning, chili flakes, salt, and black pepper, then simmer for 2-3 minutes.
  5. Combine cooked pasta and sautéed zucchini in the skillet, mix well, and stir in grated parmesan.
  6. Garnish with extra parmesan and fresh basil before serving.
