  • 2 cups Fresh Strawberries Can use thawed frozen strawberries.
  • 1/4 cup Apricot Jam Or any fruit jam for glaze.

Method
 

Tart Preparation
  1. In a large mixing bowl, combine chilled flour, sugar, and cold butter until resembling coarse crumbs. Press into tart pan and refrigerate for 30 minutes.
  2. Preheat the oven to 350°F (175°C) and bake the crust for about 20 minutes until golden brown.
Custard Preparation
  1. In a bowl, whisk together egg yolks, cornstarch, and sugar until smooth. Gradually whisk in hot milk.
  2. Cook the mixture in a saucepan over medium heat, stirring continuously until thickened, about 5-7 minutes. Remove from heat and add vanilla extract.
Assembling the Tart
  1. Pour the custard into the cooled tart shell and smooth the top. Allow it to set slightly at room temperature.
  2. Arrange sliced strawberries on top of the custard and brush with warmed apricot jam for glaze.
Final Steps
  1. Chill the assembled tart in the refrigerator for at least 1 hour before serving.
  2. Slice into wedges and serve chilled, enjoying the mix of flavors and textures.
