Method
 

Cooking Instructions
  1. Boil the noodles in a large pot of water for 3-4 minutes. Drain and rinse under cold water. Drizzle with a little neutral oil.
  2. Sauté minced garlic in a frying pan with neutral oil for 1 minute, then add sliced mushrooms and cook for 3-4 minutes.
  3. Add sliced yellow onion and matchstick carrots to the pan, stir-fry for 2-3 minutes and season with salt and pepper.
  4. In the same pan, heat oil, add shrimp and cook until pink, drizzling in soy sauce.
  5. Add pre-cooked udon noodles and stir-fry for 2-3 minutes on high heat.
  6. Pour in the sauce mixture and toss to coat the noodles, cooking for 1-2 minutes.
  7. Return vegetables to the pan, toss together, and heat for another minute before serving.
