Step-by-Step Instructions for Cranberry Orange Chicken
  1. In a food processor, combine the brown sugar, balsamic vinegar, minced garlic, zest and juice of one orange, sea salt, and black pepper. Blend until smooth.
  2. Place the chicken thighs in a large ziplock bag or shallow container. Pour the marinade over, ensuring each piece is well-coated. Refrigerate for at least 2 hours or overnight.
  3. Preheat your oven to 375°F (190°C).
  4. Transfer the marinated chicken thighs to a greased baking pan. Pour remaining marinade over and scatter extra cranberries. Bake for 25-30 minutes.
  5. Mix honey with olive oil. Brush over the chicken skin after baking. Broil for 2-3 minutes until crispy.
  6. Remove from the oven and let rest for 10 minutes. Garnish with fresh orange zest and cranberries before serving.
