- In a food processor, combine the brown sugar, balsamic vinegar, minced garlic, zest and juice of one orange, sea salt, and black pepper. Blend until smooth.
- Place the chicken thighs in a large ziplock bag or shallow container. Pour the marinade over, ensuring each piece is well-coated. Refrigerate for at least 2 hours or overnight.
- Preheat your oven to 375°F (190°C).
- Transfer the marinated chicken thighs to a greased baking pan. Pour remaining marinade over and scatter extra cranberries. Bake for 25-30 minutes.
- Mix honey with olive oil. Brush over the chicken skin after baking. Broil for 2-3 minutes until crispy.
