  • 1 cup Yogurt Dairy-free optional
  • 1 cup Quick Oats Gluten-free optional
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 1 tablespoon Maple Syrup or Honey Adjust to taste
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Cinnamon
For Serving
  • to taste Fresh Fruits Berries, banana slices, or more apples
  • to taste Nut Butter Almond or peanut butter

Method
 

Pancake Preparation
  1. In a blender, combine eggs, yogurt, and sweetener. Blend on medium speed for 30 seconds until fluffy.
  2. Add baking soda and baking powder while blending to create a light mixture.
  3. Peel and chop apples into small pieces, then add to blender and mix for 15 seconds.
  4. Transfer batter to mixing bowl, stir in oats, cinnamon, and vanilla. Let rest for 2 minutes.
  5. Heat a non-stick skillet over medium heat and grease lightly. Pour 1/4 cup of batter for each pancake.
  6. Cook for 2-3 minutes until bubbles form, then flip and cook for another 2-3 minutes until golden.
  7. Serve immediately topped with fresh fruits, nut butter, and maple syrup.
