- Begin by slicing the zucchini and yellow squash into 1/4-inch rounds, placing them in a bowl.
- Set your oven to 400°F (200°C) to preheat.
- Steam the sliced zucchini and yellow squash for 5-7 minutes until they are partially tender but still slightly firm.
- Transfer the squash to a colander and press out any excess moisture.
- In an oven-safe skillet, heat the olive oil over medium heat and sauté the minced onion for 4-5 minutes until soft and golden, then add the garlic.
