For the Chicken
  • 2 lbs Boneless Skinless Chicken Breasts or Thighs Thighs are juicier.
For the Sauce
  • 1 cup Teriyaki Sauce Thick teriyaki sauce recommended.
  • 2 cloves Garlic ( minced ) Optional, but recommended.
  • 1 tsp Fresh Ginger ( grated ) Optional, adds flavor.
For the Veggies
  • 3 cups Broccoli Florets Add towards the end of cooking.
For Thickening the Sauce
  • 2 tbsp Cornstarch Mix with water to form a slurry.
  • 2 tbsp Cold Water Necessary for the cornstarch slurry.

Method
 

Step-by-Step Instructions
  1. Place chicken in the slow cooker and pour teriyaki sauce over it. Add garlic and ginger on top without stirring.
  2. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours until tender.
  3. Remove chicken and shred with forks; return to the pot.
  4. Mix cornstarch and water in a small bowl to create a slurry. Stir into the sauce and let cook for 10 more minutes.
  5. Add broccoli florets, stir gently, and cook on HIGH for 20-30 minutes until tender.
  6. Serve over rice or cauliflower rice, garnishing with sesame seeds or green onions.
