Step-by-Step Instructions
  1. Cook your chicken by boiling for 15-20 minutes or baking at 375°F (190°C) for 25-30 minutes, then shred.
  2. Heat vegetable oil in a skillet, sauté chopped onion and minced garlic for 3-4 minutes until soft.
  3. Mix shredded chicken with sautéed onion and garlic, add cumin, chili powder, salt, and pepper, and cook for another 3-5 minutes.
  4. Preheat oven to 375°F (190°C). Pour a layer of enchilada sauce in a baking dish, fill tortillas with chicken mixture, and roll tightly.
