Preparing the Cookies
  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

  3. In a large mixing bowl, cream softened butter, white sugar, and dark brown sugar until fluffy and light.
  4. Add egg, concentrated apple juice, and vanilla extract to the creamed mixture. Mix gently.
  5. In another bowl, whisk flour, baking soda, baking powder, cinnamon, ginger, nutmeg, allspice, and salt together. Gradually mix with wet ingredients.
  6. Using a cookie scoop, portion the dough onto the baking sheet, spacing evenly.
  7. Bake for approximately 12 minutes until lightly golden and still soft in the center.
  8. Allow cookies to cool on the baking sheet for a few minutes before transferring to wire rack.
Preparing the Frosting
  1. Beat together softened cream cheese and butter until smooth. Gradually add powdered sugar and caramel sauce until fluffy.
  2. Once cookies are completely cooled, frost each cookie and top with diced apple, streusel, and extra caramel if desired.
