Preparing the Cookies
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a skillet, melt cold butter over medium heat. Mix in flour, sugar, cinnamon, and a pinch of salt until clumpy, about 5-7 minutes.
- In a large mixing bowl, cream softened butter, white sugar, and dark brown sugar until fluffy and light.
- Add egg, concentrated apple juice, and vanilla extract to the creamed mixture. Mix gently.
- In another bowl, whisk flour, baking soda, baking powder, cinnamon, ginger, nutmeg, allspice, and salt together. Gradually mix with wet ingredients.
- Using a cookie scoop, portion the dough onto the baking sheet, spacing evenly.
- Bake for approximately 12 minutes until lightly golden and still soft in the center.
- Allow cookies to cool on the baking sheet for a few minutes before transferring to wire rack.
Preparing the Frosting
- Beat together softened cream cheese and butter until smooth. Gradually add powdered sugar and caramel sauce until fluffy.
- Once cookies are completely cooled, frost each cookie and top with diced apple, streusel, and extra caramel if desired.
