  • 2 tbsp Lime Juice Freshly squeezed is preferred.
  • 1 tsp Chili Powder Adjust according to your heat preference.

  • 1/2 cup Cotija Cheese Feta can be used as a substitute.
  • 1/4 cup Cilantro Feel free to omit if not a fan.
  • 2 stalks Green Onions Sliced.

Method
 

Step-by-Step Instructions
  1. Cook pasta in salted boiling water for 8-10 minutes until al dente, then drain and cool.
  2. Grill fresh corn for 10-15 minutes until charred or thaw frozen corn.
  3. Whisk together mayonnaise, sour cream, lime juice, chili powder, salt, and pepper until smooth.
  4. Combine cooled pasta, corn, cotija cheese, cilantro, and green onions in a bowl with the dressing.
  5. Taste and adjust seasoning; chill in refrigerator for at least 30 minutes.
  6. Serve with additional toppings of cotija cheese and cilantro.
