Ingredients
  

For the Cake
  • 500 g Mixed Dried Fruits a mix of raisins, currants, and chopped apricots
  • 100 ml Brandy or apple cider for non-alcoholic
  • 200 g Butter softened
  • 150 g Brown Sugar or coconut sugar
  • 250 g Flour gluten-free all-purpose flour can be used
  • 1 tsp Baking Powder ensure it's fresh
  • 3 large Eggs or flax egg for vegan
For the Decoration
  • 200 g Marzipan optional
  • 200 g Fondant or simple icing glaze

Method
 

Preparation Steps
  1. Preheat your oven to 180°C (350°F) and prepare a baking tray by greasing it with butter and lining with parchment paper.
  2. Soak your mixed dried fruits in brandy or apple cider overnight.
  3. Cream together softened butter and brown sugar until light and fluffy.
  4. Incorporate the eggs into the creamed mixture, mixing well after each addition.
  5. Sift together flour and baking powder, then gently fold into the wet mixture.
  6. Fold in the soaked fruits along with any remaining liquid.
  7. Pour the batter into the prepared baking tray and smooth the top.
  8. Bake for about 1 hour, or until a skewer comes out clean.
  9. Cool the traybake completely before decorating with marzipan and fondant.
