Preparation Steps
- Preheat your oven to 180°C (350°F) and prepare a baking tray by greasing it with butter and lining with parchment paper.
- Soak your mixed dried fruits in brandy or apple cider overnight.
- Cream together softened butter and brown sugar until light and fluffy.
- Incorporate the eggs into the creamed mixture, mixing well after each addition.
- Sift together flour and baking powder, then gently fold into the wet mixture.
- Fold in the soaked fruits along with any remaining liquid.
- Pour the batter into the prepared baking tray and smooth the top.
- Bake for about 1 hour, or until a skewer comes out clean.
- Cool the traybake completely before decorating with marzipan and fondant.
