Method
 

Preparation Steps
  1. Preheat your oven to 200°F (95°C) for dough rising.
  2. Combine dry ingredients in a bowl: flour, yeast, salt, and optional poppy seeds.
  3. Mix wet ingredients: warm buttermilk, sugar, and butter in another bowl.
  4. Gradually mix wet ingredients into dry ingredients to form a sticky dough.
  5. Add eggs one at a time to the dough, mixing thoroughly after each.
  6. Fold in lemon zest and knead until the dough is smooth and elastic.
  7. Prepare the filling by mixing sugar and lemon zest with softened butter.
  8. Roll out the dough into a rectangle and spread the lemon filling over it.
  9. Cut into 12 equal pieces and place in a greased baking pan.
  10. Cover with foil and let rise in a warm oven for about 30 minutes.
  11. Bake at 350°F (175°C) for 28-32 minutes until golden brown.
  12. Prepare the icing by whisking powdered sugar, lemon juice, and melted butter until smooth.
  13. Drizzle icing over warm rolls and top with additional lemon zest.
