For the Wraps
  • 4 oz Rice Vermicelli Substitute with cooked quinoa or noodles for gluten-free.
  • 1 cup Vegetables (carrots, cucumber) Add bell peppers or radishes for variety.
  • 1 cup Herbs (cilantro, mint, green onion) Use your favorites.
  • 8 leaves Baby Romaine Lettuce Sturdy lettuce like iceberg or butter can be used.

  1. Marinate Chicken: Combine chicken thighs with marinade ingredients in a mixing bowl. Let marinate for 15-30 minutes.
  2. Cook Chicken: Heat grill or skillet and cook marinated chicken thighs until internal temperature reaches 165°F.
  3. Prepare Dressing: Whisk together Nuoc Cham sauce ingredients in a small bowl. Adjust flavors to taste.
  4. Prep Vegetables: Julienne carrots and slice cucumbers. Set aside.
  5. Cook Rice Vermicelli: Soak rice vermicelli in boiling water for 15-20 minutes until soft.
