Step‑by‑Step Instructions
  1. Wash and dry 2 lbs of summer squash, then slice into uniform 3/4-inch thick halves or rounds.
  2. In a large mixing bowl, combine 3 tablespoons of extra virgin olive oil, 4 minced garlic cloves, 1 teaspoon each of dried thyme and oregano, and 1/2 teaspoon of smoked paprika. Whisk until blended.
  3. Toss the sliced squash in the herb mixture until well coated. Add 1/2 teaspoon of kosher salt and 1/4 teaspoon of cracked black pepper, folding them in.
  4. Preheat oven to 425°F (218°C) and spread seasoned squash in a single layer on a baking sheet.
  5. Roast in the oven for 15 to 20 minutes, flipping halfway through for even browning.
  6. Remove from oven and sprinkle 1/4 cup of grated Parmesan cheese and drizzle with 1 tablespoon of fresh lemon juice.
  7. Garnish with 1 tablespoon of freshly chopped parsley and serve warm.
