Method
 

Step-by-Step Instructions
  1. Prepare the cookie base by mixing gingerbread cookie ingredients until a dough forms, roll out and cut out rounds, and bake at 350°F for 8-10 minutes.
  2. Make the mousse by blooming gelatin, heating espresso mix, adding gelatin, and folding in white chocolate, whipped cream, and mascarpone.
  3. Assemble the domes by filling silicone molds halfway with mousse and pressing a cooled cookie round into each.
  4. Prepare the mirror glaze by heating ingredients until smooth and at 90°F, then cool slightly.
  5. Glaze the domes by unmolding, placing on wire rack, and pouring glaze over each dome, letting it set.
