- Spray a 9" x 13" baking dish with non-stick spray and set aside.
- In a medium saucepan, combine unsalted butter, molasses, ground cinnamon, and ground ginger over low heat. Stir for 3-5 minutes until melted.
- Add mini marshmallows to the melted mixture and stir until fully melted and smooth, about 3-5 minutes.
- Remove from heat and stir in Rice Krispies until well coated.
- Press the sticky mixture firmly into the prepared baking dish and allow to cool for 30 minutes.
- Melt white chocolate in a microwave-safe bowl, mixing in ground cinnamon and ginger if desired.
- Drizzle the melted chocolate over the cooled treats and let set for 15-20 minutes.
