Ingredients
  

For the Shrimp
  • 1 pound peeled and deveined shrimp quick cooking
  • 2 tablespoons extra virgin olive oil for sautéing
  • 3 cloves garlic minced
  • 1 teaspoon paprika can swap for smoked paprika
  • 1 teaspoon dried oregano can use fresh oregano

For the Quinoa Base
  • 1 cup quinoa gluten-free grain
  • 2 cups water for cooking quinoa
For the Fresh Veggies
  • 2 cups chopped romaine lettuce can substitute with spinach or kale
  • 1 each cucumber diced
  • 1 cup cherry tomatoes halved
  • 1/4 cup red onion thinly sliced
  • 1/2 cup Kalamata olives pitted and sliced
For the Creamy Finish
  • 1/2 cup feta cheese crumbled
  • 1 each lemon cut into wedges
  • 1/4 cup fresh parsley chopped

Method
 

Step-by-Step Instructions
  1. In a large skillet, heat olive oil over medium-high heat. Add garlic, paprika, oregano, salt, and pepper. Sauté for 1-2 minutes until fragrant, then add shrimp. Cook shrimp for 3-4 minutes on each side until pink and opaque. Remove from skillet and set aside.
  2. Rinse quinoa under cold water. In a saucepan, combine quinoa with water and a pinch of salt. Bring to a boil, then reduce to low, cover, and simmer for 10-15 minutes. Once liquid is absorbed, remove from heat and let sit for 5 minutes.
  3. In a mixing bowl, combine romaine, cucumber, tomatoes, and red onion. Optionally soak the red onion in water for 10 minutes. Toss with Kalamata olives.
  4. Fold cooked quinoa into mixed vegetables. Top with sautéed shrimp, sprinkle feta, and add chopped parsley. Serve with lemon wedges.
