- Preheat your grill to medium heat, around 350°F (175°C). Apply a light coat of canola oil to the grill grates.
- Wash and slice the Honeycrisp apple into 1/8-inch thick rounds. Brush both sides of each apple slice with olive oil, then sprinkle with kosher salt and black pepper.
- Place the apple slices on the grill and close the lid. Grill for about 5 minutes per side until tender and caramelized.
- Remove apple slices and layer them with prosciutto and crumbled goat cheese.
- Drizzle with pure honey and sprinkle chopped pistachios and thyme on top before serving.
