  • 2 cloves garlic minced

  • 2 medium carrots diced
  • 2 stalks celery chopped
  • 2 cups potatoes cubed, Yukon Gold recommended
  • 1-2 cups green beans trimmed
For the Broth
  • 4 cups beef broth or vegetable broth
  • 1 can diced tomatoes with juices
Seasonings
  • 1 tablespoon Italian seasoning
  • to taste salt
  • to taste pepper

Method
 

Step-by-Step Instructions
  1. Preheat your stovetop to medium heat. Add a splash of olive oil and heat for about 1 minute. Sauté diced onion and minced garlic for 2-3 minutes until the onion is translucent.
  2. Add ground beef to the pot, breaking it apart with a spoon. Cook for about 5-7 minutes until browned. Drain excess fat.
  3. Stir in diced carrots, chopped celery, and cubed potatoes. Cook for another 5 minutes until vegetables soften slightly.
  4. Pour in beef broth and add canned diced tomatoes. Bring to a simmer and cook for 10 minutes until vegetables are tender.
  5. Add Italian seasoning and adjust salt and pepper to taste. Stir well.
  6. Toss in trimmed green beans and simmer for an additional 5 minutes. Serve hot.
