Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. In a skillet, add olive oil, chopped onion, and sauté for about 5 minutes. Stir in minced garlic and cook for an additional 30 seconds.
  3. Add lean ground beef to the skillet, breaking it apart. Cook for 6-8 minutes until browned. Season with paprika, oregano, salt, and pepper. Drain excess fat.
  4. In a mixing bowl, whisk together Greek yogurt, light sour cream, and cornstarch until smooth. Set aside.
  5. Layer half of the sliced potatoes at the bottom, then add half of the beef mixture, half of the yogurt mixture, and half of the cheddar cheese. Repeat layers.
  6. Pour beef broth around the edges of the casserole carefully.
  7. Cover with aluminum foil and bake for 45 minutes.
  8. Remove the foil and bake for an additional 15-20 minutes until the potatoes are fork-tender and cheese is melted.
  9. Let the casserole rest for 10 minutes before garnishing with fresh parsley and serving.
