- Preheat your oven to 375°F (190°C).
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced kielbasa and cook for about 5-7 minutes until browned. Remove and set aside.
- Add diced onion and minced garlic to the skillet, cooking for 3-4 minutes until translucent. Stir frequently.
- In a large bowl, mix together the sour cream, heavy cream, paprika, salt, and black pepper until smooth.
- In a greased 9x13-inch baking dish, layer half of the sliced potatoes, half of the kielbasa, half of the onion and garlic mixture, and half of the cheddar cheese.
- Repeat the layering with the remaining ingredients and pour the cream mixture over everything.
- Cover with aluminum foil and bake for 40 minutes.
- Remove the foil and bake for another 10-15 minutes until cheese is bubbly and golden brown.
- Allow to cool for 5-10 minutes before serving.
- Garnish with freshly chopped parsley if desired.
