Step-by-Step Instructions
- Cook the Bacon in a large Dutch oven over medium heat until crisp and golden, about 5 minutes. Transfer to a paper towel-lined plate, leaving the fat in the pot.
- Sauté diced yellow onion and chopped celery in the bacon fat for about 3 minutes until the onion is translucent. Add the corn and cook for an additional 4 minutes before adding minced garlic for 1 minute.
- Pour in low sodium chicken broth and increase heat to medium-high. Bring to a simmer and add diced russet potatoes, kosher salt, black pepper, paprika, parsley, thyme, and cayenne pepper. Cook for about 10 minutes.
- Stir in sliced zucchini and cook for an additional 10 to 12 minutes until the flavors meld and potatoes are tender.
- Blend 2 cups of the chowder in the pot until smooth, then mix in half and half.
- Remove from heat and let the chowder rest for about 10 minutes before serving.
