  • 1 lb Ground Turkey can substitute with ground beef or chicken
  • 3 medium Bell Peppers cut in half lengthwise
  • 1 medium Onion can substitute with shallots
  • 2 cloves Garlic or garlic powder in a pinch
  • 1 cup Rice or quinoa; can also use cauliflower rice for a low-carb option
  • 1 cup Tomato Sauce can substitute with diced tomatoes
  • 1 cup Cheese optional; use nutritional yeast for dairy-free

Method
 

Cooking Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, brown the ground turkey for 5–7 minutes, then drain any excess fat.
  3. Sauté chopped onions and minced garlic in the skillet for 3–4 minutes until translucent.
  4. Add the cooked rice and tomato sauce to the skillet, cooking for another 2–3 minutes. Season to taste.
  5. Prepare the bell peppers by cutting them in half and removing seeds, placing them cut-side up in a baking dish.
  6. Fill each pepper half with the turkey and rice mixture.
  7. Cover with aluminum foil and bake for 30 minutes. Remove foil and add cheese, baking for an additional 10 minutes if desired.
