- Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
- Mash 3-4 ripe bananas in a mixing bowl until smooth, leaving some chunks.
- Add 1/3 cup of vegetable oil, 1 egg, and 1 teaspoon of vanilla extract to the bananas. Stir until well combined.
- In another bowl, whisk together 1.5 cups of all-purpose flour, 1 teaspoon of baking soda, and 0.5 teaspoon of salt. Slowly add to the wet mixture.
- Mix in 0.75 cups of granulated sugar until well incorporated.
- In a small bowl, mix together 0.5 cups of brown sugar, 0.5 cups of all-purpose flour, 1 teaspoon of cinnamon, and 0.25 cups of cold, diced unsalted butter until crumbly.
- Pour the batter into the loaf pan and sprinkle the crumb topping evenly over it. Bake for 50-60 minutes.
