Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. Mash 3-4 ripe bananas in a mixing bowl until smooth, leaving some chunks.
  3. Add 1/3 cup of vegetable oil, 1 egg, and 1 teaspoon of vanilla extract to the bananas. Stir until well combined.
  4. In another bowl, whisk together 1.5 cups of all-purpose flour, 1 teaspoon of baking soda, and 0.5 teaspoon of salt. Slowly add to the wet mixture.
  5. Mix in 0.75 cups of granulated sugar until well incorporated.
  6. In a small bowl, mix together 0.5 cups of brown sugar, 0.5 cups of all-purpose flour, 1 teaspoon of cinnamon, and 0.25 cups of cold, diced unsalted butter until crumbly.
  7. Pour the batter into the loaf pan and sprinkle the crumb topping evenly over it. Bake for 50-60 minutes.
