Step‑by‑Step Instructions
  1. Preheat your oven to 375°F (190°C). Gather your ingredients and equipment while the oven heats up.
  2. Pat the pork loin dry with paper towels. Drizzle olive oil over the meat and season with salt and black pepper.
  3. In a mixing bowl, combine panko breadcrumbs, parsley, rosemary, thyme, and garlic. Mix until well combined.
  4. Press the breadcrumb mixture onto all sides of the pork loin, ensuring it's evenly coated.
  5. Transfer the coated pork loin to the oven and roast for 20 minutes.
  6. While roasting, prepare the glaze by whisking apple cider, Dijon mustard, and honey in a small saucepan over medium heat. Simmer for 5 minutes.
  7. After 20 minutes, brush half of the apple cider glaze over the pork loin.
  8. Continue roasting for an additional 20-30 minutes, or until the pork's internal temperature reaches 145°F (63°C).
  9. In the final 10 minutes of roasting, brush the remaining glaze onto the pork for extra flavor.
  10. Allow the pork to rest for 10 minutes before slicing.
