  • 1 packet instant yeast
  • 1 teaspoon salt a pinch

  • 1 cup fresh mozzarella cheese sliced or torn
  • 1/4 cup fresh basil leaves torn
  • 1 tablespoon olive oil for drizzling

Method
 

Preparation Steps
  1. In a large mixing bowl, combine flour, water, yeast, and a pinch of salt. Stir until a sticky dough forms, about 5 minutes.
  2. Lightly flour your surface and knead the dough for 2–3 minutes until smooth and elastic.
  3. Let the dough rise in a warm place for about 30 minutes.
  4. Punch down the dough, divide into equal portions, and roll out into thin flatbreads.
  5. Heat a non-stick skillet over medium-high heat. Cook each flatbread for 2–3 minutes on each side.
  6. Place cooked flatbreads on a baking sheet, spread tomato sauce evenly, add mozzarella and basil.
  7. Preheat oven to 475°F (245°C) and bake for 8–10 minutes until cheese is bubbling.
  8. Remove from oven, cool for a couple of minutes, slice, and drizzle with olive oil. Enjoy!
