Ingredients
  

Filling
  • 4 cups Granny Smith and Honeycrisp apples peeled, cored, and diced
  • 1 cup Brown sugar rich sweetness
  • 2 teaspoons Cinnamon can add nutmeg for extra flavor

Dough

  • ½ cup Milk warm
Frying and Glazing
  • Oil to fry Vegetable oil, canola oil, or peanut oil
  • 1 cup Powdered sugar for glaze, confectioners' sugar can be substituted
  • 1 teaspoon Vanilla extract for glaze
  • 2 tablespoons Warm milk for glaze

Method
 

Preparation
  1. Peel, core, and dice about 4 cups of mixed Granny Smith and Honeycrisp apples. In a medium saucepan, combine apples with brown sugar, cinnamon, and vanilla. Cook for 10 minutes, stirring occasionally.
  2. Mix in cornstarch and apple cider, then cook for 2 minutes until thickened.
Dough
  1. In a large bowl, sift together self-rising flour. Cut in butter until crumbly.
  2. Whisk egg yolks and milk in another bowl. Combine with flour mixture to form dough. Knead briefly and let rest for 15 minutes.
Frying
  1. Roll out dough to ¼-inch thickness and cut circles. Assemble pies with filling and seal edges.
  2. Fry assembled pies in hot oil for 2-3 minutes per side until golden brown. Drain on paper towels.
Glazing
  1. Whisk powdered sugar, vanilla extract, and warm milk in a small bowl until smooth. Drizzle over cooled pies.
