For the Mousse and Ganache
  • ½ cup Heavy Cream Whipping cream can be a lighter substitute
  • 8 ounces Semisweet Chocolate Dark chocolate works well

Method
 

Cake Preparation
  1. Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans.
  2. In a large mixing bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Whisk together oil, buttermilk, eggs, and vanilla in another bowl until creamy.
  4. Gradually combine wet and dry ingredients, adding boiling water until the batter is smooth.
  5. Divide the batter between pans and bake for 25-30 minutes until a toothpick comes out clean.
  6. Allow cakes to cool in pans for 10 minutes before transferring to wire racks.
Mousse Preparation
  1. Heat ½ cup of heavy cream until steaming, then pour over chopped chocolate and whisk until smooth.
  2. In a bowl, whip remaining heavy cream and sugar until soft peaks form, then fold into chocolate mixture.
Garnishing and Assembly
  1. Prepare ganache by heating 1 cup of cream and pouring it over chopped chocolate until smooth.
  2. Spread mousse between the cooled cake layers, then cover the entire cake with remaining mousse.
  3. Pour warm ganache over the top and let it drip down the sides, then chill for at least 2 hours.
