For the Steak
  • 2 pieces Ribeye Steaks Or substitute with sirloin or filet mignon.
  • 1 teaspoon Salt Adjust to taste.
  • 1 teaspoon Pepper Freshly ground.
  • 2 tablespoons Unsalted Butter
For the Sauce
  • 4 cloves Garlic Minced.
  • 1 cup Heavy Cream Can be substituted with half-and-half.
  • 1 cup Grated Parmesan Cheese Can substitute with Asiago.
For the Garnish
  • 2 tablespoons Chopped Fresh Parsley

Method
 

Directions
  1. Begin by seasoning the ribeye steaks with salt and pepper. Let them rest at room temperature for about 30 minutes.
  2. Heat a large skillet over medium-high heat and melt 2 tablespoons of butter. Add the seasoned steaks and sear for 4-5 minutes.
  3. Flip the steaks, adding remaining butter and minced garlic. Cook for 4-5 minutes, basting the steaks.
  4. Remove the steaks and let them rest for 5 minutes, covered loosely with foil.
  5. In the same skillet, lower the heat and add heavy cream, scraping the bottom. Whisk in Parmesan cheese until the sauce thickens.
  6. Slice the rested steaks and drizzle the creamy sauce over them. Garnish with parsley.
