  • to taste salt preferably low-sodium
For the Spice Blend
  • 2 tbsp Jamaican curry powder use authentic for best results
  • 1 tbsp all-purpose or chicken seasoning low sodium if preferred
  • 5 berries pimento berries (allspice) or ground allspice if unavailable
  • 1 unit scotch bonnet pepper adjust for spice tolerance
For the Aromatics
  • 4 cloves garlic fresh, minced
  • 1 medium onion sliced
  • 2 stalks scallion (green onion) for garnish
  • 1 tbsp fresh thyme or dried if fresh is unavailable
  • 1 tbsp fresh ginger grated or ground if fresh is not available
For the Vegetables
  • 1 medium carrot diced
  • 1 medium potato diced or cubed
For Cooking
  • 2 tbsp cooking oil for browning chicken
  • 1 cup coconut milk optional, replace with water for lighter option
For Chicken Prep
  • 2 tbsp lime or lemon juice for washing chicken
  • 2 tbsp vinegar

Method
 

Step-by-Step Instructions
  1. Clean the chicken by washing it thoroughly with lime juice and vinegar, rinse well with water, and pat dry.
  2. In a large bowl, combine the cleaned chicken with sliced onions, minced garlic, chopped scotch bonnet pepper, allspice, grated ginger, salt, all-purpose seasoning, and curry powder. Mix well and marinate for at least 30 minutes.
  3. Toast the curry powder in a pot with oil over medium heat for about 1 minute until fragrant.
  4. Brown the marinated chicken for 5-7 minutes, then add enough water or coconut milk to cover and stir gently.
  5. Add diced carrots, cubed potatoes, and fresh thyme; cover and simmer for 25-30 minutes until chicken is tender.
  6. Adjust seasoning with salt and additional scotch bonnet pepper if desired, then serve hot over steamed rice or with fried plantains.
