Base Preparation
- Mix almond flour, maple syrup, and melted coconut oil until well combined. Press the mixture into the base of a loaf pan.
Cheesecake Filling
- Blend soaked cashews, coconut cream, maple syrup, vanilla extract, and lemon juice until smooth. Pour over the crust in the loaf pan.
Chill and Serve
- Top with sliced strawberries and optionally drizzle with maple syrup. Chill for at least 3 hours until set, then slice and enjoy!
