  • 2 tablespoons Maple syrup
  • 2 tablespoons Coconut oil Melted
For the Cheesecake Filling
  • 1 cup Cashews Soaked
  • 1/4 cup Coconut cream
  • 1/2 cup Maple syrup
  • 1 teaspoon Vanilla extract
  • 1/4 cup Lemon juice
For the Strawberry Topping
  • 1 cup Fresh strawberries Sliced
  • 2 tablespoons Maple syrup Optional

Method
 

Base Preparation
  1. Mix almond flour, maple syrup, and melted coconut oil until well combined. Press the mixture into the base of a loaf pan.
Cheesecake Filling
  1. Blend soaked cashews, coconut cream, maple syrup, vanilla extract, and lemon juice until smooth. Pour over the crust in the loaf pan.
Chill and Serve
