  • 2 cups Old Fashioned Rolled Oats do not substitute with quick oats
  • 1 teaspoon Ground Cinnamon
  • 1 teaspoon Baking Soda ensure it's fresh
  • a pinch Salt optional if using salted butter
For the Frosting
  • 4 cups Powdered Sugar
  • 1 teaspoon Vanilla Extract or almond extract for a twist
  • 2-4 tablespoons Heavy Cream to adjust consistency

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, beat together the butter, brown sugar, and granulated sugar for 2-3 minutes.
  3. Add the egg and mix until fully incorporated. Scrape down the bowl as needed.
  4. Gradually stir in the flour, oats, cinnamon, baking soda, and salt until just combined.
  5. Drop rounded mounds of dough onto the baking sheet, spacing them 2 inches apart. Bake for 7-9 minutes.
  6. Allow the cookies to cool on the baking sheet for about 5 minutes before transferring to a wire rack.
  7. Cream together the butter, powdered sugar, vanilla, and heavy cream until light and fluffy.
  8. Spread frosting on the flat side of one cookie and sandwich it with another cookie.
  9. Store assembled pies at room temperature for up to 3 days or refrigerate for a week.
