Ingredients
  

For the Meat and Veggies
  • 1 pound Ground Beef can substitute with ground turkey
  • 1 Chopped Onion any onion variety works
  • 1 Chopped Sweet Pepper use red, green, or yellow
For the Casserole Base
  • 4 cups Diced Red Potatoes can substitute with sweet potatoes
  • 1 cup Corn fresh or frozen
  • 1 can Kidney Beans can substitute with black beans
For the Saucy Goodness
  • 1 can Diced Tomatoes with Green Chilis use plain tomatoes for milder flavor
  • 1 can Diced Tomatoes keep the juice for moisture
For Seasoning
  • 1 teaspoon Black Pepper
  • 1 teaspoon Salt
  • 1 teaspoon Minced Garlic
  • 1 teaspoon Chili Powder
  • 1 tablespoon Worcestershire Sauce
  • 1 pinch Cayenne
  • 1 cup Water or Broth chicken or beef broth preferred
For Topping
  • 1-2 cups Shredded Cheese taco blend or favorite cheese

Method
 

Cooking Instructions
  1. Brown the ground beef in a skillet. Add onion and pepper, sautéing until tender.
  2. Layer diced potatoes in the slow cooker, sprinkle corn on top.
  3. Spread cooked beef mixture over corn and add kidney beans.
  4. Mix diced tomatoes and spices in a bowl, then pour over layers.
  5. Cover and cook on high for 4 hours or low for 6 hours.
  6. In the last 15 minutes, add shredded cheese on top to melt.
  7. Serve and enjoy with cornbread or salad.
