  1. Warm the kefir and water in a small bowl by microwaving for about 30 seconds until warm but not hot.
  2. In a large mixing bowl, beat the egg, salt, and sugar until well blended. Stir in the warmed kefir mixture.
  3. Gradually mix in the all-purpose flour until smooth. Adjust with more flour if the batter feels too thin.
  4. Gently fold in the baking soda and diced apples into the batter.
  5. Preheat 2 tablespoons of neutral oil in a non-stick skillet over medium heat until shimmering.
  6. Drop spoonfuls of the batter into the skillet, cook for 2-3 minutes until golden brown, then flip and cook for another minute.
