For the Sandwich
  • 2 pieces Italian Sub Roll or Hoggie Rolls
  • 4 ounces Provolone Cheese or mozzarella
  • 4 ounces Genoa Salami or ham/turkey
  • 4 ounces Deli Ham or capicola/mortadella
  • 4 ounces Pepperoni optional
  • 1 cup Iceberg Lettuce or romaine/butter lettuce
  • 1 small Red Onion soaked in water if preferred
  • 1 medium Tomato ripe and juicy
  • 1/4 cup Pepperoncini or banana peppers
For the Dressing
  • 1/2 cup Mayonnaise or Greek yogurt
  • 2 tablespoons Red Wine Vinegar or champagne vinegar
  • 1/4 cup Extra-Virgin Olive Oil or light oils
  • 1 teaspoon Dried Oregano or fresh oregano
  • 1 teaspoon Dried Basil optional
  • 1 teaspoon Garlic Powder or fresh garlic
  • 1 teaspoon Kosher Salt to taste
  • 1 teaspoon Black Pepper to taste
  • 1/4 teaspoon Red Pepper Flakes optional
  • 2 tablespoons Parmesan Cheese or Pecorino Romano
For Toasting
  • 2 tablespoons Butter or olive oil
  • 1 pinch Sugar optional

Method
 

Step‑by‑Step Instructions
  1. Prepare the vegetables by rinsing and slicing the iceberg lettuce, red onion, tomato, and pepperoncini into bite-sized pieces.
  2. Make the dressing by whisking together mayonnaise, red wine vinegar, olive oil, oregano, garlic powder, salt, and pepper until smooth.
  3. Toss the prepared vegetables in the dressing until evenly coated.
  4. Preheat the broiler and spread butter or drizzle olive oil on the roll halves. Toast under the broiler for 2-3 minutes.
  5. Layer provolone cheese on the toasted roll halves and return to the broiler for 1-2 minutes until melted.
  6. Layer the Genoa salami, deli ham, and optional pepperoni on top of the melted cheese.
  7. Season tomato slices with salt and pepper, then place them on top of the meats.
  8. Top with the dressed salad mixture generously.
  9. Fold the roll over the fillings and let rest for 3-5 minutes.
  10. Slice the sandwich diagonally for serving.
