Preparation
- In a mixing bowl, whisk together ½ cup of mayonnaise, 2 tablespoons of red wine vinegar, 1 teaspoon of garlic powder, 1 teaspoon of dried oregano, and a pinch of salt and pepper until smooth.
- Add 2 cups of shredded lettuce, ½ cup of sliced red onion, and ½ cup of banana peppers to the dressing. Gently fold the ingredients together.
- Slice open sub rolls and layer your choice of meats: start with 4 ounces of salami, followed by 4 ounces of pepperoni, and finish with 4 ounces of turkey. Top with 4 slices of provolone cheese.
- Preheat your oven's broiler to high. Place the assembled sandwiches on a baking sheet and broil for 2-3 minutes, watching closely.
- Add slices of fresh tomato on top of the sandwiches and season with salt and pepper.
- Generously spoon the prepared grinder salad over the sandwich, and sprinkle a tablespoon of grated Parmesan cheese.
- Carefully close each sandwich with the top half of the roll and cut in half for easy serving.
