Method
 

Procedure
  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.

  4. Add in the egg and vanilla, mixing until smooth.
  5. Gradually add the dry mixture to the wet mixture, mixing on low until just combined.
  6. Gently fold in the diced peaches until evenly distributed.
  7. Scoop rounded balls of dough onto the lined sheets, spacing them apart.
  8. Bake for 18 to 20 minutes, or until edges are light golden brown.
  9. Allow cookies to cool on the baking sheet for about 5 minutes before transferring to a wire rack.
