Procedure
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy.
- Add in the egg and vanilla, mixing until smooth.
- Gradually add the dry mixture to the wet mixture, mixing on low until just combined.
- Gently fold in the diced peaches until evenly distributed.
- Scoop rounded balls of dough onto the lined sheets, spacing them apart.
- Bake for 18 to 20 minutes, or until edges are light golden brown.
- Allow cookies to cool on the baking sheet for about 5 minutes before transferring to a wire rack.
