Preparation
- Peel and slice about six ripe fresh peaches into a large mixing bowl.
- Add granulated sugar, brown sugar, ground cinnamon, all-purpose flour, and lemon juice to the bowl.
- Mix gently until well-coated and let sit for about 10 minutes.
Baking
- Preheat your oven to 425°F (220°C).
- Roll out your pie dough on a lightly floured surface to a circle approximately 12 inches in diameter.
- Place one half of the crust into a 9-inch pie dish and fill with peach mixture.
- Carefully roll out the second half and place it over the peach filling. Seal the edges and slice slits for steam.
- Bake at 425°F for 20 minutes, then reduce to 350°F (175°C) and bake for another 30 minutes.
- Allow to cool on a wire rack for at least four hours before serving.
