Method
 

Preparation
  1. Peel and slice about six ripe fresh peaches into a large mixing bowl.
  2. Add granulated sugar, brown sugar, ground cinnamon, all-purpose flour, and lemon juice to the bowl.
  3. Mix gently until well-coated and let sit for about 10 minutes.
Baking
  1. Preheat your oven to 425°F (220°C).
  2. Roll out your pie dough on a lightly floured surface to a circle approximately 12 inches in diameter.
  3. Place one half of the crust into a 9-inch pie dish and fill with peach mixture.
  4. Carefully roll out the second half and place it over the peach filling. Seal the edges and slice slits for steam.
  5. Bake at 425°F for 20 minutes, then reduce to 350°F (175°C) and bake for another 30 minutes.
  6. Allow to cool on a wire rack for at least four hours before serving.
