Method
 

Preparation Steps
  1. Preheat your oven to 450°F (230°C).
  2. Pat the whole chicken dry with paper towels. Place it breast side up in the roasting pan.
  3. Combine olive oil, softened butter, salt, pepper, and fresh herbs in a bowl. Rub the mixture over the chicken.
  4. Optional: Stuff the chicken cavity with lemon wedges or extra herb sprigs.
  5. Roast the chicken for 15 minutes at 450°F (230°C), then reduce to 375°F (190°C) for 45-60 minutes until the internal temperature reaches 165°F (74°C).
  6. Monitor the color of the skin; tent with foil if it browns too quickly.
  7. Let the chicken rest for 15 minutes before carving.
  8. Carve the chicken and serve warm with your favorite sides.
