  • 2 pounds Large Shrimp peeled and deveined
For the Cream Sauce
  • 2 tablespoons Olive Oil can substitute with butter if preferred

  • 4 tablespoons Butter used for sautéing aromatics
  • ½ cup Finely Chopped Onion shallots are a nice alternative
  • 4 cloves Minced Garlic fresh garlic is preferable
  • 2 tablespoons Chopped Fresh Basil or 1 tablespoon dried
  • teaspoon Ground Nutmeg
  • 1 cup Heavy Whipping Cream base for the creamy sauce
  • 1 cup Grated Parmesan Cheese divided for thickening the sauce
  • 1 cup Shredded Monterey Jack Cheese
For the Crunchy Topping
  • ½ cup Crushed Pork Rind Crumbs keto-friendly alternative to breadcrumbs

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a large baking dish.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season shrimp with salt and pepper, then sear for 1-2 minutes on each side.
  3. Add 4 tablespoons of butter to the skillet, then add ½ cup of finely chopped onion and sauté for 3-4 minutes until translucent. Stir in minced garlic, basil, and nutmeg.
  4. Pour in 1 cup of heavy whipping cream, bring to a gentle simmer, then stir in ½ cup of grated Parmesan and 1 cup of Monterey Jack cheese until creamy.
  5. Place seared shrimp in the greased baking dish and pour the cream sauce over them.
  6. Combine remaining ½ cup of Parmesan with ½ cup of crushed pork rind crumbs, then sprinkle over the dish.
  7. Bake in the preheated oven for around 25 minutes until golden brown and bubbly.
