  • 2 tsp ground cumin

  • 1 tsp ground coriander
  • 0.5 tsp ground cinnamon
  • 0.5 tsp freshly ground black pepper Adjust to taste
  • 1 tsp sea salt Essential for seasoning
For the Base and Garnish
  • 1 large onion, thinly sliced

Method
 

Step-by-Step Instructions
  1. In a mixing bowl, whisk together the minced garlic, fresh lemon juice, extra virgin olive oil, and spices including cumin, paprika, coriander, cinnamon, black pepper, and sea salt until well emulsified.
  2. Pat the chicken pieces dry and generously coat with the marinade. Refrigerate for 2 to 8 hours.
  3. Preheat your oven to 220°C (425°F).
  4. Spread the sliced onions in a layer at the bottom of your prepared baking dish and place the marinated chicken on top.
  5. Pour any remaining marinade over the chicken and roast for 35-40 minutes, until the skin is crispy and the internal temperature reaches 75°C (165°F).
  6. Let the chicken rest for 5-10 minutes, then garnish with fresh parsley and serve with lemon wedges.
