- Blend the full-fat cottage cheese, large eggs, oat or almond flour, baking powder, vanilla extract, lemon zest, honey or maple syrup (if using), and a pinch of salt in a blender until smooth.
- If the cottage cheese is watery, drain it before blending. Add more oat flour if the batter is too loose.
- Gently fold in fresh blueberries using a spatula, ensuring even distribution.
- Heat a non-stick skillet over medium heat and lightly grease it. Watch for a drop of water to sizzle.
- Scoop about two tablespoons of batter for each pancake bite and space them evenly on the skillet. Cook for 3 to 4 minutes until edges set.
- Flip each pancake bite and cook for an additional 2 to 3 minutes until both sides are golden brown.
